Jacob Glowacki, executive chef of Marcella’s Ristorante, Pizzeria & Wine Bar in the Short North Arts District, wants to bring a level of big-city sophistication to Columbus’ approachable restaurant atmosphere.
Glowacki has been executive chef at the Short North Marcella’s since 2015, but he has been making culinary creations in Columbus for years. He started working with Cameron Mitchell restaurants after high school, beginning with Cap City Fine Diner, and later transitioning to Marcella’s. What he enjoys most about Columbus is the “eclectic mix of people and desires,” he said. “The taste trends are always changing and expanding.” The convenient Short North location makes the venue a great place for drinks with friends or dinner with family.
Glowacki cultivates his inspiration from the fresh and seasonal ingredients around Columbus. He describes his cooking style as diverse, catering to the occasion. Overall, Glowacki says his cooking “is rooted in the fundamentals of mise en place, and respecting the ingredients.” Mise en place is a French term meaning ‘everything in its place.’ At Marcella’s, one can expect the deliciously-crafted dishes traditional of a Cameron Mitchell restaurant, but with an Italian twist. Guests continually praise the fine-crafted, Italian-inspired cooking when visiting the restaurant. Some local favorites are the daily features, which allow chefs to “experiment with new ingredients and techniques while maintaining the fundamentals of [the] regular menu.”
As a chef participating in the 2016 Short North Gala, Glowacki described having a wonderful experience in which he had the opportunity to “interact with all of the other organizations and chefs, bouncing ideas off of each other and sharing knowledge to help bring the Short North together.” The Tenth Annual Gala was an event featuring various Short North chefs and confectioners preparing their finest creations, in addition to performances by the Jazz Arts Group and BalletMet.
